Our Story

Clovis Young, Founder & Head Honcho, tells how Mex got Mad!

I grew up in San Diego but our best family holidays were always in Baja – the small peninsular of California that’s actually in Mexico.

The food was delicious – so fresh & clean. After surfing we would devour grilled steak and fresh pico de gallo rolled into burritos and smothered with salsa – the hotter the better. We’d go fishing and cook up tacos on an open beach fire. I love eating Mexican food, the flavours, the spice, the heat and love cooking it more. I dreamed, for years of opening my own Mexican restaurant to share that Baja style burritos are amongst the best food in the world.

We opened the first restaurant in Australia because the outdoor lifestyle reminded me of Baja. It had that sense of “la familia”, everyone was welcoming and relaxed.  Our food is made to authentic Mexican recipes, using authentic Mexican products. We are committed to serving the best flavours and freshest quality produce that you can roll into a burrito. And more than just food we want to share the vibe and sounds of Mexico in our restaurants.

Our Story

I dreamed, for years of opening my own Mexican restaurant to share that Baja style burritos are amongst the best food in theworld.

    We believe this is the best Baja-style burrito this side of the Pacific. Half a kilo of the most complete, satisfying & tasty meal you can hold in one hand.

    Piled with brown rice, black beans, fresh pico de gallo, cheese, shredded lettuce for extra fresh crunch, sour cream, your choice of meats or sauteed vegetables and warm salsa, rolled into a toasted flour or wholewheat tortilla.

  • Small Burrito

    All the hand-held goodness of a burrito, rolled for smaller appetites or that cheeky pre-gym snack.

    Toasted soft flour tortilla piled with brown rice, black beans, fresh pico de gallo, cheese, shredded lettuce for extra-fresh crunch, sour cream, your choice of meats or sauteed vegetables & warm salsa.

  • Naked Burrito gf

    All the best of the burrito but hold the tortilla & pile a bowl with brown rice, black beans, fresh pico de gallo, cheese, crisp shredded lettuce & sour cream.

    (translation) "Little Cheesy Thing" or the Ultimate Mexican Toastie...

    Choose from meats or sauteed vegetables, topped with fajita onion & capsicum, packed with grated cheese, toasted to crispy, melting perfection in a soft flour or wholewheat tortilla.

    Served with cool sour cream and two salsas.

    Take a stack of tortilla chips, ladle on hot nacho cheese & top with black beans, fresh pico de gallo, sour cream, sliced jalapeños & crispy shredded lettuce.

    "Taco" is said to come from the charge used by Mexican silver miners 400 years ago. Now famous for a tortilla wrapped around explosively delicious fillings of your choice.

    These are made with corn maseca for real authentic flavour & served traditional-style, with double tortillas.

    A low fat and gluten free option.

    Taco 'bout choice, the tortillas for these tacos are made with soft, white flour (like our burrito tortilla) and safely cradle every morsel as you eat.

    Fresh Mesclun greens, Black Beans, Pico de Gallo, Corn & Pineapple salsa, Cheese, Coriander & Onion, and topped with your choice of freshly grilled, slow cooked meats or sauteed veggies - drizzled with our signature Chipotle Lime Vinaigrette.

SO WHAT INSPIRES US?

Freshness – Mexico grows so much fresh produce. It’s packed into every dish, piled high in the markets, sold on every street corner & there’s still enough to feed a monumental 70% of the US. So we use the freshest ingredients & our luchadors’ biceps prove what it takes to smash a 10kg crate of fresh avocados into guacamole each day, in every store.

Colour – It’s healthy to eat a rainbow, right? So we build our burritos with yellow, brown, black, red, white & several shades of green before you’ve even chosen your filling & salsas, just look inside & see!

Flavour – Feel like you’ve been hit around the head with a rosemary bush & half a tonne of peeved pot-roast? We make no apologies for the authentic taste of our 6 hour slow-cooked Carnitas, if it’s too much, try the chicken. It’s marinated overnight in chipotle & grilled fresh. If flavour is not your thing, try a cheese sandwich from the nearest service station.

Heat – Now, chillies have been cultivated in Mexico for over 6,000 years & we use them by the tonne, from the mildest ancho (poblano) which adds depth & smokiness to our roasted tomato salsa, to jalapenos, chillies de arbol & the hottest habanero for our picante salsa. Then there are guest appearances from the Caroline Reaper chilli – officially recorded on the Scoville scale as the hottest in the World!

Clean – Where possible we avoid preservatives – so you know exactly what you are eating; real, fresh food, combined as simple ingredients to make the best tasting Mexican food this side of Baja.
