Today we’d like to introduce you to Roshan Koirala, who is one of our most experienced franchise business consultants. Roshan is out there every day helping our network of amazing franchisees serve up the biggest hits of Mexican flavour and grow their businesses. We keep him super busy! But with 15 years of experience in the QSR space, Roshan knows everything there is to know about making restaurants like your local Mad Mex thrive.

Even though he is always on the run, he took a moment out of his busy schedule to tell us what he loves about working at Mad Mex.

You’ve worked for a couple of different restaurants over the years. What attracted you to take your career to Mad Mex?

The great food it has and the great look of the restaurants! I also love the opportunity that I have to work with the founder of the company directly, and his passion for the real Mexican food.

What do you love about your role? 

Because I work with so many franchisees, the people connections I’ve formed have been a real source of inspiration to me. There’s also the pride of being able to take a franchisee from the very ground level to become a hero within the organisation.

I also love the Mad Mex culture itself. Everyone here is free to put their opinion forward, and success is celebrated across the organisation. I get a real sense of ownership of my role here. 

What are your career ambitions with Mad Mex?

For now, my main goal is to see all the franchisees that I work with grow and thrive. In the longer term, if there’s an opportunity to become a franchisee myself at Mad Mex I may just jump at it! 

What has been your favourite achievement in working at Mad Mex so far?

It’s not a single achievement, but I consider the highlights of my job, and the “big moments” being those where we successfully open new restaurants or reopening existing ones to give the local communities their favourite Mexican food back. It’s a major achievement every time.

Finally, as you’re a Mexican aficionado – hit us with your big Mad Mex meal recommendation!

Tough choice, but I’ll go with the Grande Melt with chicken and chorizo, spicy salsa, and of course with Guac. I feel the pairing of chicken and chorizo is made in heaven, and the taste, once toasted, is just too good!
