Black beans, also known as the turtle beans, have been an essential crop in Americas for thousands of years. The Mad Mex method of cooking black beans follows the traditionally method used for centuries. First we soak our beans for up to 4 hours before draining this liquid. We then add a flavourful brine of chipotles, onion, garlic, cumin and seasonings to the soaked beans, and cook under pressure until they have a creamy texture. Black beans have a more distinctive earthy flavour that screams Mexico, so don’t let the colour put you off, these are the heart and soul of Mexican cuisine.
