Salsa Verde – Medium

Philosophy / Story
This salsa is a staple in every Mexican kitchen. It is green in colour due to the use of Tomatillo. Tomatillo looks like a [green] tomato but it is not actually a tomato, it is a member of the gooseberry family.
Unlike the tomato, Tomatillos have a paper-like husk, which surrounds the fruit. As the fruit matures, the husk turns brown and begins to peel away. Tomatillos are the key ingredient in many Mexican green sauces, and have a light, fresh and citrus flavour.
